Vodka Chicken

Easy lemon chicken- great weeknight dinner. This chicken recipe is light and juicy, while the vodka sauce packs it with flavour!

Quickly fry and char the lemon slices in a frying pan over a high heat, then remove.

Beat the eggs and the milk in a small bowl.

Tip the flour into a separate bowl and dip the chicken breast into the flour and then into the egg mixture.

Place the chicken breasts into the frying pan on a medium heat and cook through - approx 5-7 minutes on each side, then set aside.

Deglaze the pan with the vodka and loosen the flavour bits on the bottom of the pan with a wooden spoon, then add the butter, lemon juice, herbs and season with salt and pepper to taste.

Reduce the liquid and then return the chicken and grilled lemon slices to coast the chicken.

Serve, topped with the sauce alongside some linguine, and enjoy!
