Rum BBQ Ribs

These BBQ ribs are sweet and sticky and packed with flavour! BBQ ribs so tender they just fall off the bone.

- 1 pinch salt (to season)
 - 1 pinch ground pepper (to season)
 - 1.5 kg baby back ribs (membrane removed)

Paste
- 1.5 tsp sweet paprika
 - 0.5 tsp ground nutmeg
 - 1.5 tsp ground cumin
 - 1 tsp Chinese five spice
 - 1 tbsp Worcestershire sauce
 - 1 tbsp ground ginger
 - 2 tsp chipotle chilli paste
 - 5 tbsp maple syrup

Rum BBQ Sauce
- 50 g soft dark brown sugar
 - 4 cm fresh ginger (peeled)
 - 125 ml tomato ketchup
 - 60 ml Captain Morgan Dark Rum
 - 1 tbsp Worcestershire sauce
 - 3 tbsp cider vinegar
 - 0.5 tsp dried chilli flakes
 - 4 cloves garlic (peeled)
