Apple Pecan Salad with Zesty Apple Dressing

Ingredients

In a jar, mix olive oil, Innocent apple juice, lemon juice, apple cider vinegar, honey, lemon zest, salt and pepper. Shake to combine.

Line 4 plates each with 1/4 of the greens. Arrange apple slices on top, then sprinkle pecans, cranberries and goat cheese on top.

Before serving, drizzle with salad dressing. Crack black pepper over top, if desired.

	250 ml	Extra Virgin Olive Oil
	60 ml	Innocent Apple Juice
	1 tbsp	Lemon Juice
	1 tbsp	Apple Cider Vinegar
	1 tbsp	Honey
	0.25 tsp	Lemon Zest
	0.25 tsp	Salt
	1 pinch of	Cayenne Pepper
	65 g	Spinach And Rocket Mix (or any kind of greens)
	1	Apple (sliced)
	150 g	Pecans (chopped)
	65 g	Dried Cranberries
	60 g	Goats Cheese (crumbled)
	0	Ground Black Pepper
