This vegetarian recipe with a tasty cheese and mushroom filling is only made better by some Johnnie Walker Whisky! Give this delicious crispy potato dish a try!

Mix the grated vegetables with the chopped parsley in a large bowl and season with salt & pepper.

In another bowl, combine the mushrooms, grated cheese and whisky.

Heat the butter and most of the oil in a large non-stick frying pan. Add half of the grated vegetables and press down in an even layer.

Cover with the cheese mixture and top with the remaining vegetables and press down firmly.

Cook over a high heat for 5 minutes, then lower the heat and cook for another 10minutes until the vegetables are soft.

Brush the top with oil and cook under a hot grill until golden.

Serve in wedges with a side of tomatoes and fresh parsley.
