- 2 medium potatoes (cut into 1.2 inch wedges)
- 2 tbsp fresh ginger (minced)
- 3 cloves garlic (minced)
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground tumeric
- 275 ml vegetable stock
- 1 bay leaf
- 120 mls coconut milk
- 1.5 tsp kosher salt
- 1 medium cauliflower (cut into florets)
- 2 courgettes (cut in half lengthwise, then crosswise into 1/4 inch half circles)
- 1 tbsp cornflour
- 135 g frozen peas
- 3 tbsp fresh coriander (chopped)

- 295 g basmati rice
- 1 pinch cayenne pepper
- 1.2 tsp curry powder
- 1 tsp mustard seeds
- 2 tsp caraway seeds
- 1 bag Twinings Earl Grey
- .25 tsp kosher salt
- 2 tbsp fresh lemon juice
