Place the wine, water, sugar and vanilla seeds into a large pot over a medium heat. Heat and stir to dissolve sugar.

Place pears and thyme sprigs into liquid and simmer for about 30-40 minutes or until tender.

Remove pears, set side and reduce syrup for further 5 minutes. To serve, place pears on serving plate and drizzle with syrup.
