These super easy moist, light cupcakes are so fruity and delicious. This cupcake recipe is perfect for baking with kids!

Prepare your oven. Preheat it to 190°C (375°F).

Line the cupcake paper cases on your oven tray.

Put all the cake ingredients in a bowl and mix them manually until fully blended, or with a food processor for 2 minutes.

Fill the cupcake paper cases until they’re approximately 3/4 full.

Put the tray in the oven and bake the cupcakes for 10 to 15 minutes, until you see them turn golden on the outside.

Check the doneness. Insert the skewer into a cupcake and, if it comes out clean, they’re ready. If not, bake them for a few more minutes and check again. Repeat process until your cupcakes are done.

Once done, take the tray out of the oven and let the cupcakes cool down completely.

For the icing : Beat the butter manually or in a food processor, until it becomes smooth.

Slowly start mixing in the sifted icing sugar, and keep beating the mix until it’s fully blended and the texture is fluffy.

Ribena time! Gradually add the cordial into the mix, together with the blackcurrant jam. This yummy icing should be smooth, so if it’s a bit runny, add more icing sugar into the mix.
