Pre-heat a small pan and add the Pimms. Heat until the liquid has reduced by half, then add the apple balsamic and cornflour mixed with water, reduce the heat & simmer for 2 minutes or until thickened.
Preheat the oven to 200C/400F/Gas mark 6, glaze the fillets with the dressing and place onto a lightly greased baking tray, cook in the oven for 10 minutes.
Place the sliced tomatoes on a plate, drizzle with olive oil. Scatter over the mozzarella, strawberries and basil leaves, grind over a generous amount of black pepper.
Tear or cut the glazed Quorn Fillets and place on top of the salad, drizzle over the remaining dressing.
