

Honey Cider and Thyme Pot Roast Chicken
This roast chicken is coated in sweet honey butter and then cooked in vegetables and cider. It’s sweet, sticky and gloriously good. A wonderful roast chicken dinner recipe.

- 750 ml Kopperberg cider
- 5 sprigs fresh thyme
- 50 g butter (softened)
- 2 kg whole chicken
- 12 shallots (peeled and halved)
- 500 g carrots (trimmed and halved if large)
- 3 celery stalks (quartered)
- 2 fresh bay leaves
- 1 whole bulb garlic (halved horizontally)
- 1 tbsp clear honey
