- 200 g flour (plus extra for dusting)
- 3 medium eggs (beaten)
- 0.5 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 0.5 tsp bicarbonate of soda
- 3 tsp ground ginger
- 150 g unsalted butter
- 100 g golden syrup
- 75 g black treacle
- 175 g muscovado sugar
- 75 g dark chocolate (chopped)
- 2 balls stem ginger (finely chopped)

- apricot jam
- 150 g icing sugar (sifted)
