Melt chocolate in a double boiler, microwave or in a bowl over a pan of simmering water. Once the chocolate has melted, let it cool.

If using hazelnuts, toast and grind them.

Cream room temperature butter and sifted powdered sugar until light and fluffy.

Add rum and cooled chocolate. Mix until until smooth, scraping down the sides a couple times. If you're adding ground hazelnuts, add them now and mix until thoroughly incorporated.

Cool the chocolate rum mixture in the fridge for 30 minutes.

Roll chocolate rum mixture into 30-50 balls and then each ball in cocoa powder or chocolate sprinkles.

Store in an air-tight container in the fridge for up to a week.
