Duck in Blackcurrant Sauce

Delicious rich blackcurrant sauce over perfectly cooked duck breast. This tender duck breast makes a lovely simple but elegant dinner meal.

Mix the Ribena blackcurrant cordial, Dijon Mustard, smoked paprika and honey in a small bowl.

Prepare the duck by scoring the fat in a diamond pattern. Heat the oil in a frying pan over medium heat and, when hot, begin sautéing the duck, skin side down.

Cook for 3 minutes, then pour off the fat: skewer the duck with a fork and gently tip the pan over the sink to let the fat run off.

Cook the duck skin side down for another 3 minutes or so and pour off the fat. Flip and fry the other side for 5-6 minutes. Pour off fat and flip again.

Slice the duck breast and brush with the Ribena glaze.

Cook in the oven at 180C for 10 mins.
