- sea salt (for the pasta water)
- 2 tbsp olive oil
- 1 tbsp butter
- 2 shallots (diced)
- 2 pinches chilli flakes (optional)
- 3 sprigs fresh thyme (leaves only)
- 2 sage leaves (finely chopped)
- 24 medium sized mushrooms
- salt and pepper
- 120 mls Moet & Chandon
- 120 mls double cream
- 70 g freshly grated vegetarian parmesan (plus more for garnish)
